  1. We wash the liver thoroughly and clean it from the upper film
  2. We cut it into small pieces, in the process of cutting we remove the ducts. Soak the liver in milk for a couple of hours.
  3. Put the pieces of liver in a saucepan. Fill them with water so that it slightly covers the liver.
  4. We put on the stove and bring to a boil. As soon as it boils, remove the foam and add salt and all other spices.
  5. Cook over low heat from the moment of boiling for about 20 minutes.
  6. Peel the onions and carrots. Rub the carrots on a coarse or medium grater, cut the onion into small cubes. Heat a frying pan with olive oil and simmer the onions and carrots over low heat until soft.
  7. To make the pate tender and homogeneous, pass the cooked liver through a meat grinder. We do not pour out the broth, we may need it.
  8. Put the chopped liver, onions and carrots, as well as the peeled avocado in a blender bowl, beat and chop until smooth.
  9. We taste the pate, add salt, if necessary. If the pate, in your opinion, is not tender enough, you can add a little broth to it and beat again.
