Hollandaise Keto Sauce is a warm sauce made from butter, lemon juice, and raw egg yolk. The sauce is heat treated in a steam bath, so using raw egg yolk in this recipe is safe. You can also use pasteurized yolk.

  1. Heat water in a saucepan to a low boil to create a water bath. Add egg yolks and lemon juice to a heatproof bowl that can be placed in a saucepan of boiling water. Whisk with a hand mixer (or whisk) until the mixture doubles in volume.
  2. Place a bowl over boiling water to make a water bath, heat for 1 minute, stirring constantly. Then slowly pour in the melted butter and whisk thoroughly.
  3. Once the sauce has thickened, it's ready. The mass should be firm enough not to drip from the back of the spoon.
  4. Note:
  5. If the sauce gets too thick, add some hot water and whisk.
  6. For a more lemon flavor, add some lemon zest to the sauce.
