After pickling, hard-boiled eggs change the color of the protein, become elastic, with a brighter taste. In this form, they can be served on their own as a cold snack or included in all kinds of salads and Asian dishes, replacing ordinary boiled eggs.

  1. The amount of sugar, vinegar and pepper can be adjusted to your liking. Pickled eggs can be spicy, more or less spicy, very salty or not.
  2. Instead of sesame oil, any other oil of your choice will do.
  3. Rice vinegar can be substituted with any other vinegar that is natural.
  4. Cook hard-boiled eggs in the usual way: send them to cold water and cook for about 10 minutes after boiling water. Cool eggs in cold water.
  5. In a saucepan, combine soy sauce, rice vinegar, sesame oil, sugar and ground hot pepper. Bring to a boil. Let the sugar dissolve completely.
  6. Remove the shells from the eggs.
  7. Place the peeled eggs in an easy-to-marinate container with high sides.
  8. Pour the hot marinade over the eggs. Cool them at room temperature, then put them in the refrigerator for a day under a lid or foil.
  9. If the eggs are not completely covered with marinade, turn them over from time to time.
  10. Eggs marinated in soy sauce, dry and cut into circles, halves, wedges.
  11. Serve eggs marinated in soy sauce such as herbs, cut into salads and other dishes.
