Express Dinner: Halibut with Soy Sauce

  1. Chop the onion finely and grate the carrots on a coarse grater. Fry all this in oil over medium heat until half cooked, about 5-7 minutes
  2. Add the halibut fillet (thawed if frozen) and chop it straight with a spatula
  3. Saute for 5 minutes over low heat, then reduce heat to medium, squeeze out a clove (or two) of garlic, add lemon juice, soy sauce and pepper as desired. Stir, cover and simmer for about 10 minutes. Just a couple of minutes before the end, add butter and let the dish rest a little.
