Psarosupa (Psari is Greek for fish and soup for soup) is a Greek fish soup suitable for the keto diet. The soup is flavored with spices, the variations of which can be changed.
Fish is sometimes considered unsuitable for a keto menu due to its high protein and low fat content. But diet is not a reason to give up fish. For a keto diet, you can use fatter fish, such as red snapper. The fat content of this fish is over 5%.

  1. Fish to clear of fins, tail, scales, viscera. Cut the rest into large portions. You can use ready-made perch fillets, but then the broth will be less rich.
  2. Put the perch in a deep saucepan, pour 1.2 liters of water, add olive oil, bay leaf, salt, finely chopped celery. Put the pan on the fire, bring to a boil and simmer the fish for 10-15 minutes over low heat. Remove the fish from the pan, place on a dish and lightly drizzle with olive oil.
  3. Add chopped red bell pepper, zucchini slices, chopped garlic to the boiling fish broth. Add all spices (except rosemary, turmeric and black pepper). Boil vegetables over low heat for 10-15 minutes.
  4. Add butter, sour cream, stir and simmer for 5 minutes. Then put turmeric, rosemary, black pepper into the soup, mix.
  5. The soup is ready. The fish can be returned to the broth, or served as a separate dish.
  6. Garnish with peeled pumpkin seeds before serving.
