Recipe for vegan keto cookies that are gluten-free and low-carb. These flaxseed cookies are packed with nutrients from flaxseed and almond flour.

  1. Grind the flaxseed in a meat grinder or food processor to make flaxseed flour. Transfer to a mixing bowl.
  2. Add almond flour, erythritol, cinnamon to the flaxseed flour and stir.
  3. Add all the water to the dry ingredients and mix everything together. If the mixture seems too runny, let the dough rest for 15 minutes to allow the flaxseed flour to absorb moisture.
  4. When the dough thickens, shape into small balls and place them on a baking sheet, and press down a little on top to form flat cookies. You don't need to leave a lot of space between them because the cookies will stay the same size after baking.
  5. Bake the cookies for 20-25 minutes at 175 C. Let it cool for 15-20 minutes and serve.
