Light French pancakes, also known as crepes, are perfect for breakfast or dessert. With berries and whipped cream on top - a treat for the whole family!

  1. In a bowl, combine eggs, cream, water and salt with a hand mixer.
  2. Beat the psyllium powder slowly until a smooth batter is obtained. Let the dough "rest" for 10 minutes.
  3. Fry in butter in a small skillet like regular pancakes, ½ cup (100 ml) dough = one pancake. Make sure your skillet is not too hot, keep it over medium heat. Wait for the top of the pancakes to show signs of being cooked, then turn over.
