Fried keto chicken with broccoli and butter

  1. Melt half the butter in a large skillet.
  2. Season the chicken with plenty of salt and pepper and fry on both sides for about 20-25 minutes (depending on the size of the chicken). To keep the chicken thighs cool, wrap them in foil or place them in the oven at low temperatures.
  3. While the chicken is cooking, wash and peel the broccoli. Cut into small pieces. Rinse the leeks thoroughly to remove any dirt that may be lurking between the layers and chop finely.
  4. In a separate skillet, melt the remaining butter, stir in the garlic powder, salt and pepper. Add the leeks to the skillet, then broccoli as the onions soften. Fry for a couple more minutes.
  5. Serve the chicken and vegetables, season with a generous portion of ghee.
