  1. To prepare simple and very tasty homemade muffins, we need the following ingredients: premium wheat flour, medium-fat kefir (I use 2.5%), butter (at least 72% fat), medium-sized chicken eggs (category C-1, about 50 grams each), granulated sugar and vanilla sugar, baking powder and a little salt. All foods should be at room temperature.
  2. We immediately turn on the oven to warm up to 190 degrees. I have a regular Hephaestus gas oven, bottom heating, no convection. In a separate bowl, mix 280 grams of wheat flour with 1 teaspoon of baking powder and a pinch of fine salt. Sift through a sieve to loosen the dry mixture and remove possible debris.
  3. Put 100 grams of soft butter in a bowl for beating, add 150 grams of granulated sugar and 1 teaspoon of vanilla sugar.
  4. Grind butter and sugar for a few minutes. You can do this with a hand whisk or with a mixer. Then we introduce chicken eggs one at a time (only 2 pieces are needed) and drive in the mixture until fluffy.
  5. Pour 250 milliliters of kefir and quickly mix it into the base.
  6. It remains to add the dry mixture from step 2.
  7. In literally 10-12 movements with the help of a silicone spatula, all the ingredients of the dough for future cupcakes will become a single whole. Of course, you can mix everything with a mixer, but you need to do this quickly and for a very short time, otherwise the finished cupcakes will turn out to be dense and clogged.
  8. We spread the prepared dough into portioned molds for about 1 / 2-2 / 3 of the volume. I have a silicone mold, into which I insert special paper capsules, and you can lightly grease it with vegetable oil. We put the blanks in a preheated oven and bake for about 25-30 minutes at 190 degrees at an average level. If you have an electric oven with top-bottom heating, such cupcakes will be ready much faster - you can check in about 20 minutes.
  9. The readiness of kefir muffins can be checked visually or with a wooden toothpick, which should come out of the dough completely dry. A total of 10 medium-sized muffins are obtained from the specified amount of ingredients used. I baked everything at the same time (in a silicone mold and separate portion molds).
