Slightly Lime Sour Avocado Keto Pie is a vegan, low-carb, no-bake treat. The dessert turns out to be hearty and healthy, since it contains a large amount of fresh fruits that are not subject to heat treatment.

  1. Add all the base ingredients in random order to the S-attachment blender bowl.
  2. Stir on high speed for 1-2 minutes. Stop the blender, scoop the dough off the walls and repeat mixing. Repeat until the ingredients come together and form a sticky dough that can be easily flattened in a baking pan. If the dough is too dry, add an extra 1-2 tablespoons of water.
  3. Place the dough in a 20cm split baking dish or similar glass dish. You can also use an 8-inch glass pie dish. Smooth out the dough so that the mixture is evenly thick on the bottom and sides of the mold (approx. 3-5 mm thick). This thickness will prevent the cake from falling apart when you take it out of the mold. Place in the freezer while you cook the filling.
  4. Place all of the filling ingredients in a blender except the lime zest.
  5. Blend at high speed until a creamy green dough forms. There should be no lumps in it. Stir in the lime zest with a spatula.
  6. Add the avocado and lime filling to the prepared tart base, spread evenly with a spatula, and return to the freezer for 1 hour (or 3 hours in the refrigerator).
  7. Remove the cake carefully from the removable baking pan so that the edges do not fall off. If you are using a glass dish, cut the pie at once.
  8. Serve with a spoonful of coconut yogurt and extra lime zest.
  9. The pie is stored in the refrigerator for up to 5 days using an airtight container. Otherwise, the avocado will lose its fresh green color.
