Keto bread with cheese and garlic

Recipe for cheese garlic bread with mozzarella, parmesan and cream cheese. The bread resembles Italian-style breadsticks but is keto-friendly, low-carb, and gluten-free.

  1. Preheat oven to 220C. Prepare a baking sheet with parchment paper.
  2. In a large microwave-safe bowl, place 1.5 cups of chopped mozzarella and 3 tablespoons of cream cheese. Microwave the cheese for 30 seconds. Remove the cheese, stir and microwave for another 30 seconds. Repeat the steps until the cheese is soft and smooth. This should take a total of about 1-2 minutes, depending on your microwave.
  3. Add the egg, almond flour, coconut flour, herbs, salt and pepper to the melted cheese. Mix thoroughly with a spatula until smooth. The dough will be sticky. (You can also mix the dough in a food processor equipped with a dough attachment.)
  4. Let the dough cool slightly to make it easier to work with. Place the dough on a parchment-lined baking sheet. Using the back of a spoon or fingers moistened with water, spread the dough on the baking sheet (you should get a flat cake with a thickness of 0.6-0.8 cm). (Alternatively, cover the dough with cling film / parchment and roll to the desired thickness).
  5. Bake in the oven for 5 minutes.
  6. Remove the bread from the oven, burst any large air bubbles, and spread the remaining mozzarella and parmesan on top.
  7. Return the cheese-topped bread to the oven for another 5-7 minutes, until the edges of the bread are golden brown.
  8. Remove the bread and cool.
  9. Garnish with basil if desired and serve with your favorite sauce.
