One of the benefits of this recipe is the ability to replace ingredients. The soft cottage cheese in this recipe can be replaced with softened cream cheese, Greek yogurt, or sour cream. And instead of tartar, you can add baking powder. If possible, add some whey protein to the dough, which replaces the flour in this recipe.

Ingredients

Directions

  1. Preheat oven to 150C and line a baking tray with parchment paper (you may need two baking trays to accommodate all portions of the dough).
  2. Separate the egg whites from the yolks.
  3. Add the cream cheese to a bowl of egg yolks and stir with a hand mixer until smooth.
  4. Add the tartar and salt to a bowl of egg whites. Using a hand mixer, beat everything together at high speed until stable peaks are formed.
  5. Using a spatula or spoon, add the yolk mixture to the egg whites and mix gently until smooth.
  6. Using a spoon, shape the portions of bread (about 1.5-2 cm high) and place them on the prepared baking sheet at a distance of about 10 cm from each other.
  7. Bake in the oven on a medium rack for 30 minutes, until the top of the bread is golden brown.
  8. Cool the finished bread before serving.
