Pancakes are an easy way to turn vegetables into a complete meal. They are low-carb and keto-friendly and can be served with sour cream, sugar-free tomato sauce, and Rancho dressing. For the pancakes, you will need almond flour, cabbage, eggs, hard cheese, and flavor additives.

  1. Add all ingredients except avocado oil to a blender and blend until you have a coarse, crumbly mixture.
  2. Preheat a skillet over medium heat. Add enough avocado oil to lightly coat the bottom of the pan.
  3. Use a small ladle or tablespoon to scoop out a ball of pancake mix. Make sure the mass is compressed. Place the pancakes gently into the skillet. Repeat until the pan is full.
  4. Cook the pancakes for 1 to 2 minutes to brown the bottom, then gently flip over and press on top with a spatula.
  5. Continue frying for another 1-2 minutes until crisp.
  6. Transfer the finished pancakes to a paper towel to absorb excess fat.
  7. Serve hot or at room temperature.
