Keto buns made from a mixture of cheese, flaxseed and almond flour. These breads are gluten-free, low-carbohydrate, and high in fiber.

Ingredients

  1. In a bowl, combine mozzarella, cream cheese and butter. Preheat the mixture in the microwave on high power for 50-60 seconds to melt (you can also heat it in a steam bath).
  2. After the ingredients have melted, mix again to combine.
  3. In a separate bowl, combine almond flour, xanthan gum, salt and baking powder.
  4. In a third bowl, combine the egg, flaxseed flour, and water. Whisk to combine the ingredients well.
  5. Preheat oven to 200 degrees C. Line a baking sheet with parchment paper.
  6. Add three prepared mixes to one common mixing bowl or mixer bowl. Beat for 1-2 minutes until all ingredients are combined. You can also mix everything by hand using a whisk.
  7. Wet your hands with water and scoop up the dough. Divide the dough into 6 roughly equal portions and form into balls. The pieces should be as uniform as possible so that the buns are baked evenly.
  8. Place prepared buns on a baking sheet and smooth slightly. Sprinkle sesame seeds on top (optional).
  9. Bake for 12-15 minutes until golden brown.
