A casserole with minced meat, hot Mexican sauce and curd is keto-friendly, low-carb and gluten-free. Lean beef or turkey mince is equally suitable for this dish. As for cottage cheese, you can take soft cottage cheese with a fat mass fraction of 1% or more fatty fermented milk product. Cottage cheese gives the casserole a delicate texture and quenches the spiciness of seasonings.

  1. Preheat oven to 200 degrees C.
  2. Combine the minced meat and Taco seasoning in an oiled baking dish (for example, 20x30 cm).
  3. Bake the minced meat for 20 minutes.
  4. While the mince is baking, combine the curd, salsa, and about half of the shredded cheddar cheese.
  5. Remove the minced meat from the oven, drain off excess liquid, divide the meat into small pieces using a potato crush.
  6. Spread the creamy cheese mixture over the minced meat, sprinkle with the remaining cheese.
  7. Return the casserole to the oven and bake for another 15-20 minutes, until the meat is completely cooked and the cheese is melted and golden brown.
