A quick and easy cauliflower and cheese garnish. Cauliflower is combined with butter, cheddar cheese, and mascarpone to make it tender and loaded with healthy fats. It tastes like potato puree, but contains fewer carbohydrates. Plus, cabbage is high in fiber and quite nutritious. With added fat from cheese and butter, it is a great side dish for the keto diet.

  1. Cut the cauliflower into florets. Place the buds in a microwave-safe bowl, cover with a paper towel and cook on high power until soft, 5-10 minutes. You can also boil the inflorescences in water or steam. Drain the cabbage and pat dry with a paper towel to remove excess moisture.
  2. Add the kale to the blender bowl along with the rest of the ingredients.
  3. Grind until smooth.
  4. Transfer to a plate and serve immediately.
