Keto chicken with broccoli and spinach

Chicken fillet with broccoli, spinach and cheese is cooked in one pan. This is a complete main course that can be served alone or with a vegetable side dish.

  1. Preheat a skillet with high sides over medium-high heat. Add 2 tablespoons olive oil for frying. Add chopped chicken, Italian herbs, chopped red pepper (if using), salt and black pepper. Fry for 5 minutes (until chicken is done).
  2. Add garlic and sauté for another minute.
  3. Add tomatoes, broccoli, spinach and stir.
  4. Add grated cheese and cream cheese, stir. Simmer 3-5 minutes until broccoli is done, stirring occasionally.
  5. Serve the chicken as a separate dish, with cauliflower rice, cauliflower puree, or squash spaghetti.
