Chicken Breast with Tomatoes and Basil Oil is a low-carb keto-friendly dish that is cooked in one pan. The chicken is juicy and aromatic. This dish is equally suitable for both oven and outdoor grilling.

  1. Preheat an open grill (if temperature control is available, preheat to 250 C) / or oven to 220 C. Place a cast iron skillet (or grill pan) on the grill / oven so that it warms up with the grill / oven.
  2. Season the chicken on both sides with salt and pepper. In a small bowl, combine tomatoes with olive oil and season with salt and pepper.
  3. When the grill (or oven) is hot, place the chicken breasts, skin side down, in the skillet. Then add the tomatoes.

  6. While the chicken is cooking, make the basil oil. In a small bowl, combine the ghee, basil, lemon zest, and garlic. Mash with a fork until thoroughly mixed.
