This red hot pepper sauce is a way to use chili if your food is hot. The sauce contains a sugar-free sweetener, which removes the spiciness to some extent. As an alternative to raw peppers, use a tablespoon of chili flakes. For a softer sauce, you can remove all the seeds and skin the peppers.

  1. In the bowl of an S-blade blender, combine all the sauce ingredients.
  2. Transfer the mixture to a non-stick saucepan (preferably enamel), heat to a boil, cover and simmer for 15-20 minutes, until the sauce thickens and shrinks. Stir the sauce occasionally with a non-metallic spoon.
  3. Transfer to a sterile jar, close the lid and refrigerate at room temperature.
