Keto Chocolate Mint Fudge

Two-layer chocolate-mint keto fudge is good as a dessert for every day and as an appetizer for a festive table. Small servings are sugar-free, low-carb, but help fight sugar cravings.

  1. In an easy-to-gravy saucepan over low heat, combine all the ingredients in the bottom layer.
  2. Heat, stirring constantly, until the ingredients are melted and the mixture is smooth.
  3. Grease or line a 20 cm x 10 cm mold with parchment. Pour the bottom layer mixture into the mold, cool at room temperature.
  4. In a clean saucepan over low heat, combine all topcoat ingredients (except mint extract and color, if using). Heat, stirring constantly, until the ingredients are melted and the mixture is smooth.
  5. Once the ingredients are mixed, remove the pan from the heat, add the mint extract and color, and stir.
  6. Pour the mint layer over the chocolate layer and smooth.
  7. Sprinkle with chocolate chips on top and refrigerate for 10 minutes.
  8. Cut the fondant into 12 pieces. Store the fondant in the refrigerator under the lid. Allow the fondant to soften before serving.
