This low-carb condensed milk recipe is perfect for starting a keto diet and when you want simple, familiar sweets.

  1. Add all the ingredients except the vanilla extract to a medium saucepan and combine. Put on low heat, heat for 20-30 minutes, until thickened and halved.
  2. Stir the mixture constantly so that it does not burn. The color of the condensed milk should be creamy or caramel, but not brown.
  3. Remove from heat and stir in vanilla extract. Let cool to room temperature. As it cools, the mixture will thicken even more.
  4. Transfer to an airtight jar and store in the refrigerator for 5-7 days.
  5. Whenever you need to use condensed milk in a recipe, place it in the microwave for 6-8 seconds, or add some hot water and stir.
