As at the beginning of the diet, and in the middle of the journey, there may be a need for sweets and light desserts. If pies and other keto-friendly flour baked goods don't look like white sugar and wheat, then mousse and cream desserts can be made to taste better than their sugar counterparts. These desserts come in handy when there is no time to make pies or cookies.

  1. Using a mixer, beat the cream at medium to high speed until it doubles in size and begins to curl up the peaks.
  2. In a separate bowl, combine softened cream cheese, powdered monk fruit, strawberries, blueberries, lemon zest, and vanilla. Beat with a mixer until the mixture is smooth and the ingredients are combined.
  3. Mix the two mixtures in one bowl and beat with a mixer until smooth.
  4. To use as a dessert, refrigerate, transfer to portioned cups and serve. Garnish with nuts or grated coconut if desired.
  5. No pre-cooling is required when used as a cream.
