  1. In a large bowl, combine all the cutlet ingredients. Do not overdo it, otherwise the cutlets will be tough. With wet hands, form eight equal size patties.
  2. Heat butter or olive oil in a large skillet. Fry the patties for at least 10 minutes until tender, turning occasionally.
  3. In a small bowl, combine the tomato paste and cream. Pour the mixture into the skillet a couple of minutes before the patties are cooked. Stir and leave to simmer for a few minutes. Season with salt and pepper to taste.
  4. Sprinkle with chopped fresh parsley before serving.
  5. CABBAGE, ROASTED IN CREAM OIL
  6. Chop the cabbage on a coarse grater, or with a food processor or knife.
  7. Heat the butter in a large skillet.
  8. Add the cabbage and sauté for at least 15 minutes, stirring regularly, until soft with a brownish crust around the edges.
  9. Reduce the heat towards the end. Season with salt and pepper to taste.
