A simple three-ingredient peanut-flavored cookie recipe. All you need to cook is a sweetener, unsweetened peanut butter, and an egg.

  1. Preheat the oven to 175C. Line a baking sheet with parchment paper.
  2. In a bowl, combine all ingredients with a spatula until smooth.
  3. Using a cookie scoop or tablespoon, scoop out the dough and form into balls.
  4. Place on a prepared baking sheet with parchment. There should be 10 balls.
  5. Press the balls from above with a fork, forming a criss-cross pattern.
  6. Bake for 12-15 minutes, until the tops are golden brown.
  7. Let the liver cool for 10 minutes and serve. Store at room temperature for 3 days in a container with a lid.
