Keto minced meat and almond flour casserole

Casserole with ground beef, tomatoes and cream cheese topping for lunch or dinner. The dish belongs to Mexican cuisine. The composition contains spicy seasonings, which can be skipped if desired.

  1. Preheat a skillet for minced meat, add a little butter or other oil for frying so that the minced meat does not stick.
  2. Fry the minced meat over medium heat along with the garlic, pepper and salt. Cook until the minced meat is browned.
  3. Add canned tomatoes and leftover seasonings.
  4. Cover and simmer over low heat for 7-10 minutes.
  5. Add the minced meat to a greased baking dish (20x30 cm).
  6. Preheat oven to 180 C.
  7. Place a medium saucepan of water, almond milk, and butter on the stove. Heat and bring to a boil, reduce heat.
  8. Combine almond flour in portions into the boiling almond-water mixture.
  9. Stir in half of the grated cheddar cheese. Taste, add salt and pepper.
  10. The mixture should be about the same consistency as smooth mashed potatoes. If it's too thick, add a little water or almond milk. If the mixture is too runny, add some almond flour.
  11. Spread the ground beef evenly in a baking dish.
  12. Top with the prepared almond flour mixture.
  13. Sprinkle the remaining cheese on top.
  14. Bake at 180 C for 25-35 minutes.
