These curd keto pancakes with coconut flour are high in cheese and low in flour.

  1. Whisk eggs, cottage cheese, vanilla and stevia in a large bowl.
  2. Add coconut flour, baking soda and stir. The dough will be thick.
  3. Preheat a nonstick skillet over medium heat. Grease a skillet with cooking oil.
  4. Use a small ladle to gently dump the dough into the skillet. If the dough does not run, you can flatten it with a spatula.
  5. Bake for 3-4 minutes, then turn over and leave for another 2-3 minutes, until the pancake rolls to a golden brown.
