  1. Cut the avocado into 2 halves, remove the pulp with a spoon and mash until puree. If the fruit is ripe and soft, you can do this step using a mortar and pestle. If the avocado is firm, you can use a blender.
  2. Mix all ingredients until smooth using a mixer or whisk.
  3. Let the dough sit for 5 minutes until the coconut flour absorbs moisture.
  4. Preheat a skillet, brush with oil and spread out the dough using a small ladle. If the dough is too thin, add 1 or more tablespoons of coconut flour to the pancake mixture until the desired thickness is achieved.
  5. Fry pancakes for 2-3 minutes over medium heat. When bubbles appear on the surface of the pancake, turn the pancake over and fry for another minute.
