Thin pancakes with coconut flour, aka Mexican tortillas, do not contain sugar and gluten. These pancakes are great for breakfast with a cheese or bacon filling, and for lunch with cheese, meat and vegetables. For pancakes for dessert, you can add sweetener and vanilla to the dough to taste and serve pancakes with sour cream and berries.

  1. Add baking powder and coconut flour to a large mixing bowl.
  2. Add egg whites to flour and beat until smooth with a whisk or fork. The dough is thin enough to use a spoon or ladle to form pancakes.
  3. Melt the coconut oil in a skillet.
  4. Place a portion of the dough in the skillet and fry on one side until the top of the pancake begins to bubble.
  5. Flip the pancake over and fry on the other side until golden brown.
