Homemade peanut flour and sweetener cookies are a great dessert for tea. Peanut flour has a subtle nutty flavor, is keto-friendly and is gluten-free. Unlike other types of nut flour, this flour can be defatted: the manufacturer removes some of the fat from the product to obtain a light airy texture of the flour. The result is a smooth flour with a lot of protein and little fat. However, for the keto diet, the combination of proteins and fats in the dishes is important, so during cooking, you need to add fats to the dough. For this purpose, butter is used. Alternatively, you can grind peanuts at home using a blender. The flour will not be as fine and uniform as purchased flour, but the oiliness inherent in peanuts will be preserved.

Ingredients

Directions

  1. Preheat oven to 160 C.
  2. Sift the peanut flour to remove any clumps. Combine flour with vanilla, salt, sweetener.
  3. Combine softened butter, dry ingredients, and eggs (using a spatula or mixer).
  4. Form dough balls and place them on a parchment-lined baking sheet. You should make 10-12 servings.
  5. Use a fork to flatten the dough balls to form a cookie. Sprinkle with white or brown sugar sweetener, if desired.
  6. Bake the cookies for 10-15 minutes. Cool to room temperature and serve.
  7. Bon Appetit!
