Keto Pie with Olive Oil

Keto olive pie is light, savory, slightly moist and crumbly. This dessert is suitable for breakfast and holiday tea.
To decorate the cake, you only need powder dusting and lemon slices.

  1. Preheat oven to 175C-180C. Grease a 23 cm baking pan and line with parchment paper.
  2. In a mixing bowl, add almond flour, coconut flour, baking powder and salt, and combine with a spatula or spoon.
  3. Add eggs, sweetener and lemon zest to mixer, beat on high speed for 5-8 minutes, until light and fluffy.
  4. Add flour mixture to the whipped mixture, then olive oil and butter. Stir with a spoon or spatula until smooth.
  5. Pour the mixture into the prepared baking pan.
  6. Bake for 30-35 minutes, until the cake is firm when touched with a spatula.
  7. Leave to cool in the pan for 15 minutes before transferring to a flat dish to cool.
  8. When the cake has cooled, serve sprinkled with stevia or erythritol powdered sugar. Garnish with lemon wedges, if desired.
