Recipe for keto pizza dough with yeast or baking powder.

Ingredients

Directions

  1. Preheat oven to 220C.
  2. If using dry yeast, activate it: add yeast with 1 teaspoon of sugar to a bowl. Cover with a glass of warm water. Stir and let sit for 10 minutes until yeast activates.
  3. In another bowl, stir together the dry ingredients: coconut flour, almond flour, whole psyllium husk, salt, garlic powder. If you are not using yeast, add baking powder to this mixture.
  4. Pour apple cider vinegar and a glass of warm water (a glass of warm water with yeast if you are using the yeast version) over the dry ingredients and stir with a spoon. The dough will be thin at first, but then it absorbs moisture, forming a viscous pizza dough.
  5. After 30-40 seconds, knead the dough with your hands. Knead for 60-90 seconds, squeezing the dough with your hands to make sure the fibers are in good contact with the liquid and bind. Form into a ball and set aside for 10 minutes in a bowl at room temperature.
  6. Lightly brush a sheet of parchment paper with olive oil, place the dough ball in the center, add another piece of parchment paper on top, and press lightly to flatten it.
  7. Then use a rolling pin to roll the dough into a disc. Do not press too hard on the roller to keep the dough thick enough to leave some air in it. If rolled too thin, the dough will be crisper when baked.
  8. Form the thick edges of the pizza. Just roll the edges of the dough inward, in a cylinder shape, do not press too hard to leave air.
  9. Transfer a piece of parchment paper with a pizza base to a baking sheet or pizza rack.
  10. Bake the pizza base at 220 ° C for 15 minutes.
  11. After 15 minutes, the base is ready to add the filling. Then the pizza will need to be returned to the oven for 10-12 minutes.
  12. You can prepare the dough the night before and store in the refrigerator in a sealed container, or freeze the pre-baked pizza base.
