This cheese and vegetable salad is infused with bell peppers, olives and basil flavors. The salad can serve as a full-fledged side dish to the main course, as well as an independent snack.

  1. Fry pine nuts in a dry skillet over low heat. Cooking time: 3-4 minutes, or until light golden brown.
  2. Slice olives in half, bell peppers into strips, basil into large pieces. Add to a large spinach serving platter and toss.
  3. Chop the feta cheese and add the toasted pine nuts.
  4. Combine lemon juice and olive oil for salad dressing. Stir and leave for 10 minutes to soften the spinach.
