Keto salad of broccoli, bacon and cheese

This light broccoli salad is a delicious balanced dish with a flavorful dressing, bacon and toasted nuts. The salad can be served fresh and allowed to sit in the refrigerator until the next day. The next day, the salad will not lose its properties, moreover, it will be saturated with spice juice.

  1. Divide the broccoli into florets. In a medium to large saucepan, bring 6 cups salted water to a boil. While the water is heating, prepare a large bowl of ice cold water. Add broccoli florets to boiling water and cook until tender for 1-2 minutes. Remove the broccoli with a slotted spoon and place in a prepared bowl of ice water. When the broccoli has cooled, drain the water.
  2. Whisk the dressing ingredients (mayonnaise, apple cider vinegar, Dijon mustard) in a bowl. Season with salt and pepper.
  3. Combine all the salad ingredients in a large bowl and pour over the dressing, stir again. Serve immediately or refrigerate before serving.
