Fried cod with spices, feta cheese and vegetables is a hearty salad that is good both fresh and the next day.

Ingredients

Directions

  1. Cut the tomatoes in half and combine them with diced cucumbers, olive oil, white wine vinegar, salt, oregano, and chopped basil leaves.
  2. Cut the tomatoes in half and combine them with diced cucumbers, olive oil, white wine vinegar, salt, oregano, and chopped basil leaves.
  3. Sprinkle the cod fillets with lemon pepper, salt (add salt if the lemon pepper contains no salt), red pepper, garlic powder, onion powder, and Italian seasoning. Rub the seasoning over the fish so it is well saturated.
  4. Heat olive oil in a skillet over medium heat. Place the fish seasoned side down and cook for 4-5 minutes. After 2 minutes, you can reduce the heat to avoid burning the spices. Turn the fish over and turn the heat to medium. Squeeze the lemon juice into a skillet and fry the fish for another 3-4 minutes. Set aside the cooked fish for a few minutes.
  5. Place the cod fillets on a serving plate and add half the vegetable salad. Add more lemon, basil, dill, or other garnish to taste.
