The Greek-style lamb keto salad features fresh romaine lettuce, grape tomatoes, feta cheese and roasted lamb. Homemade sauce based on Greek yogurt is used for dressing.

  1. Season the lamb with salt, pepper, garlic, ginger and oregano. Preheat a frying pan, add 1 tablespoon of olive oil. Cover the skillet with a lid and cook the lamb for 5-7 minutes on each side to cook the lamb completely. You can cook to your liking. Set aside the cooked lamb while preparing the dressing.
  2. Make a dressing: Whisk together the Greek yogurt, lemon juice, the rest of the olive oil, red wine vinegar, and a grated garlic clove.
  3. Assemble the salad in layers: coarsely chopped lettuce, chopped cucumber on top, then tomatoes and chopped feta cheese, finally diced lamb. Pour the dressing over the salad and garnish with herbs.
