These keto protein waffles are soft on the inside and crispy on the outside. This is the perfect breakfast or late snack. Whey protein isolate must be added for the waffles to be protein, as it contains less lactose, which is important if you are intolerant to dairy products. Alternatively, any whey protein powder can be used here.

  1. Add whey protein powder, almond milk, eggs, baking powder, and cheese (cottage cheese) to the blender bowl. Mix this mixture until smooth and thick.
  2. If the mixture is too thick, add 1 more tablespoon of almond milk until the dough is smooth.
  3. Heat the waffle iron and brush it with a little ghee (or vegetable oil of your choice). It is very important to wait for the waffle iron to heat up before pouring the dough onto the surface of the waffle iron.
  4. Pour in a dough portion just to cover the surface of the waffle iron, as the mixture will expand as it bakes. Close the waffle iron and cook for up to 5 minutes (guided by the recommended cooking time for your waffle iron), until the waffle is golden brown. Repeat this step until all the dough is finished. The recipe makes 10 small waffles or 5 large waffles.
  5. Pour the prepared waffles with the chosen sauce and serve hot.
