Try these hearty, low-carb pancakes! They are delicious on their own or as a complement to other dishes. Top them with homemade mayonnaise, butter, or sour cream. Mmm ... just lick your fingers!

  1. Take cauliflower, rinse, trim off the ends and grate, or chop in a food processor.
  2. Transfer the cauliflower to a large bowl, add the rest of the ingredients, and stir. Set aside the mixture for 5-10 minutes.
  3. Take a large skillet that can hold 3-4 pancakes (about 7-10 cm each), then the frying process will go faster. Place a skillet over medium heat, melt butter, or add vegetable oil. Cover the finished tortillas with a lid or place on the top shelf in a low-heat oven to keep the first batch of pancakes warm while you cook the rest.
  4. Scoop the dough with a wooden spoon or tablespoon, place in a hot skillet and flatten. The diameter of the pancakes should be about 7-10 cm.
  5. Fry the pancakes for 4-5 minutes on each side. Adjust the heat so that they do not burn. Also, don’t flip the pancakes to the other side too early, otherwise they may fall apart!
