This low-carb vegetable rice can be served with any Mexican dish, such as burritos and tacos.

  1. Heat oil in a skillet over medium heat.
  2. When the oil is hot, add the onion and jalapenos and cook until tender, about 5 minutes, stirring constantly. Add garlic, tomato paste and cook over medium heat for another 1 minute.
  3. Add cauliflower rice, cumin and salt and cook, stirring occasionally, for 5 minutes (or until cauliflower is as soft as you like).
