Nettle is known to be full of beneficial minerals and vitamins. The plant has no net carbs, only fiber, so it is great for adding to the keto diet. In spring and summer, when you can find young nettles almost everywhere, it is worth preparing something from this plant. For example, a hearty soup with nettle, bacon and cheese. This dish tastes like spinach soup. You can store the soup in the refrigerator for several days, but nettle soup is definitely tastier right after cooking.

  1. In a soup pot, bring the water to a boil, add a pinch of salt and chopped nettle leaves, and simmer for 2-3 minutes.
  2. Remove the nettle from the pot, drain and set aside.
  3. Melt 2 tbsp. l. butter with pieces of bacon in a frying pan. When the bacon is crispy, transfer it to another bowl.
  4. Put the chopped onion in the same pan, fry until the onion turns transparent and golden brown. Then add the finely chopped garlic cloves and stir.
  5. Add boiled nettle to the pan and stir, add cream, 2 cups vegetable broth, stir.
  6. Add seasonings: salt, ground red paprika, crushed garlic. Simmer the mixture over low heat for about 5 minutes.
  7. Blend the soup with a hand blender and cook for another 5 minutes over low heat.
  8. Transfer the soup to oven-safe portioning dishes.
  9. Combine the almond flour, cream cheese and cheddar, and roll the mixture over the honey with two sheets of parchment.
  10. Place the rolled mixture on top of each portion of the soup.
  11. Bake the soup in the oven at 180C for 5-10 minutes, or until golden brown.
  12. Place a few slices of bacon on top of the crust before serving.
