Sometimes you really want something new for breakfast. Especially on the weekend. So I decided to remember the good old pancakes - they cook quickly, and it's almost impossible to spoil them. I had to change the line-up a bit, but the essence remained the same. Keto pancakes that melt in your mouth. Be sure to try.

  1. Crack eggs, add salt, vanillin and sweetener. Whisk with a fork or mixer
  2. Add cottage cheese, mix well
  3. Then add all the flour and soda
  4. And at the very end, warm oil
  5. Preheat the skillet, remember to add 1 teaspoon of coconut oil and spoon the mixture over
  6. Close the lid and reduce heat to medium. Leave the pancakes for 2-3 minutes, check periodically. As they "grab", turn over. Also close the lid - 1 minute should be enough. Actually everything =)
  7. Serve the pancakes with sour cream or keto jam. Or both.
