  3. Heat oil in a large skillet. Fry the tomatoes for a few minutes.
  4. Pour the eggs from the bowl into the skillet over the tomatoes. Wait until the omelet is a little hard before adding the mozzarella cheese.
  5. Reduce heat and let the omelet sit. Serve immediately and enjoy!
