An original weekend breakfast with an interesting presentation - a hearty omelet roll with nutritious minced chicken filling. This omelette roll is also called bouncing, because during frying it bounces funny in the pan. Such a dish of minced meat and eggs will provide you with strength for the whole day!

  1. You can make minced meat yourself or buy a ready-made one. Along with minced chicken, you can use pork and beef or turkey.
  2. Put the minced meat in a deep bowl, add salt and black pepper. Finely chop the parsley and add to the minced meat in a bowl.
  3. Chop the peeled onions: either chop as finely as possible, or chop in mashed potatoes with an immersion blender.
  4. (If you cook the minced meat yourself, then the onion can be minced along with the meat.)
  5. Put chopped onions in a bowl with minced meat. Stir with a spoon.
  6. Cover the board with cling film and sprinkle a little with flour. Place half of the minced meat on the plastic film and flatten it into a circle that is close to the diameter of the bottom of your pan.
  7. If you want a thinner roll, use a quarter of the minced meat.
  8. Beat two eggs into a bowl, salt and add 1/2 teaspoon of turmeric and mix well.
  9. If you are making a thin roll, one egg is sufficient.
  10. Pour the egg mixture into a wide, flat plate.
  11. Transfer the minced chicken pancake to a plate on top of the egg mass - it can be easily removed from the film
  12. Heat 1 tbsp in a skillet. a spoonful of vegetable oil. Gently transfer the minced meat pancake with egg from the plate to the pan and fry over medium heat for about 2-3 minutes.
  13. Cover the skillet with a plate and flip it over so that the minced omelet is fried side up. Then slide the omelet off the plate back into the pan with the uncooked side down and cook for another 1-2 minutes.
  14. Remove the finished omelet on the wooden surface of the board and cool slightly.
  15. Fry the second omelet in the same way.
  16. Using a plastic wrap or spatula, wrap the minced chicken omelette in a roll and let cool slightly.
  17. Cut the egg and minced chicken roll into slices about 1.5-2 cm thick.
  18. Garnish the minced omelette roll with dill sprigs and serve.
