Omelet with sausage, zucchini, tomatoes and bell peppers

Omelet with sausage, zucchini, tomatoes and bell peppers

Although this appetizing dish is cooked in a pan, it looks more like a casserole than the usual omelet. Thanks to the large number of vegetables, the dish turns out to be bright, juicy, and pieces of cooked-smoked sausage add a pleasant aroma, taste and satiety. Try it!

Ingredients

  1. Wash and dry the vegetables. Peel the onions and carrots. Young zucchini need not be peeled.
  2. Cut the onion and zucchini into approximately 1 cm cubes. Cut the carrots into smaller cubes.
  3. Heat a skillet (mine is 24 cm in diameter) with vegetable oil over low heat. Sauté chopped onions and carrots, stirring occasionally, for 7-8 minutes.
  4. Remove seeds and stalks from bell peppers.
  5. Unpack the sausage.
  6. Cut the sausage, bell peppers and tomatoes into cubes about the same size as the courgette.
  7. Add zucchini and bell peppers to the skillet. Continue frying the vegetables for another 12-15 minutes, until the zucchini is half cooked.
  8. Add tomatoes. Sprinkle vegetables with a pinch of salt and stir fry for 5-6 minutes.
  9. Add the sausage, stir.
  10. Cook for another 5-7 minutes, until the vegetables are done. The sausage will warm up, lightly fry and give off its aroma. Taste and, if necessary, add salt and ground black pepper to taste.
  11. Combine eggs and milk in a separate container. Add 1-2 pinches of salt and beat until smooth.
  12. Pour the egg and milk mixture into the pan. Shake the skillet lightly to distribute the mixture evenly.
  13. Cover the skillet with a lid and cook the omelet with vegetables and sausage over low heat for 6-7 minutes, until the egg and milk mixture is completely cooked.
  14. If desired, sprinkle each serving with a pinch of chopped herbs, garnish with lettuce leaves and serve.
