  4. Beat the sweet butter with yolks for literally half a minute, after which it's time to add the orange jam. If you have it very sweet, the amount of granulated sugar used can be reduced to taste.
  5. Once again we combine everything with a mixer and pour in sifted rice flour mixed with baking powder and a pinch of salt.
  6. After mixing, a rather thick and dense cake dough is obtained. You do not need to interfere for a long time.
  7. Now with a mixer, beat the egg whites in a clean and dry bowl until soft peaks.
  8. Add the whipped proteins in parts into the rice cake dough, mixing everything thoroughly in the same way as you prepare the biscuit dough. That is, folding movements in order to release air bubbles as little as possible.
  9. The finished orange cake dough with rice flour turns out to be soft, loose and keeps its shape well. It does not spread
  10. We transfer it to a suitable sized baking dish, which I advise you to grease with oil beforehand. We level with a spoon or spatula.
  11. It takes about 40-45 minutes to bake this delicious and aromatic cake at 180 degrees. Just remember to preheat the oven to the desired temperature. We check the readiness with a wooden toothpick or skewer, which should come out dry.
  12. Take the finished cake out of the mold and cool completely.
  13. If you wish, you can pour the caramel sauce over the cake - it goes perfectly with these fragrant and delicate homemade cakes.
