Pork skewers with zucchini noodles

Grilled tender pork and salad with zucchini noodles and Mediterranean dressing. Delicious keto-style dish!

  1. Peel the pork tenderloin from the films and cut into small pieces. In a small bowl, combine the marinade ingredients. Place the pork in a ziplock bag and pour in the marinade. Shake the bag thoroughly so that the marinade completely covers the meat. Refrigerate for at least half an hour. The longer the better!
  2. While the pork is marinating, soak wooden skewers in cold water to keep them moist during frying.
  3. Using a slicer or a very sharp knife, cut the zucchini lengthwise into thin strips. Place the resulting noodles in a small bowl with mint and parsley.
  4. In a small bowl, combine the garlic, lemon zest, lemon juice and oil. Add the mixture to the zucchini noodles and set aside without stirring.
  5. In a small bowl, combine mayonnaise, garlic and hot sauce. Set aside.
  6. Remove the pork from the refrigerator and divide into 4 equal portions. Pour the marinade and string the meat onto wooden skewers.
  7. Preheat a grill pan or outdoor grill.
  8. Fry the skewers for 4 minutes on each side or until the temperature inside the meat reaches 62˚C.
  9. Using tongs, lightly stir the zucchini noodles with the dressing and season with salt and freshly ground pepper to taste.
