  1. First, you need to peel the potatoes and grate them on a large grater. If you use new potatoes, squeeze the juice out of them.
  2. Add vegetable oil to the pan and fry the potatoes over medium heat for 4-5 minutes.
  3. Finely chop the green onions.
  4. In a separate bowl, beat 3 eggs and add the onions. Stir, salt, pepper, and season the potatoes.
  5. Eggs with onions should be beaten to form a homogeneous mixture.
  6. Pour this mixture into the potatoes and spread with a spatula, if necessary.
  7. Cover the pan and cook the omelet over medium heat for 4 minutes.
  8. Then turn it over, increase the heat and fry for another 1 minute.
  9. Spread the prepared potato omelet on a plate with the potato side to the bottom.
