Spicy dough recipe for keto pie and salty pastries. This dough can be used to make meat and cheese pies, and can also be used as is if you like the creamy taste of puff pastry. The dough is quite simple to prepare, and the ingredients are spread for the keto diet, so they are easy to find.

  1. Add flour and gum in a blend and blend until smooth / or use a fork to blend.
  2. Add butter cubes, egg, and vinegar. Blend in a blender until the dough begins to collect into a ball and the butter pieces are covered in flour. The mixture should resemble coarse bread crumbs.
  3. Transfer the dough to plastic wrap and roll into a ball, then flatten and seal.
  4. Refrigerate the dough for at least 30 minutes. You can also freeze the dough and store it for up to a month.
  5. To use the dough to make a pie:
  6. Place a cold disk of dough between two sheets of parchment paper and, working quickly, gently roll out to size.
  7. Form puffs / biscuits or fill out a cake pan. Refrigerate prepared dough for 30 minutes (or freeze 10-15 minutes) before baking to keep it in shape.
  8. Brush it with an egg solution if desired. When baking the base of the pie, pierce it several times with a fork to let air out.
  9. Bake the dough at a temperature of 220 C for 8-10 minutes (if you do not use the filling).
  10. Note:
  11. The dough of keto pies is more prone to burning than traditional puff pastry. Therefore, it is recommended to check the color of the dough every 5-10 minutes while baking. The crust will not brown if baked without the filling. However, if you add the filling to raw dough, the dough may burn due to the long cooking time. To prevent this from happening, cover the dough with a sheet of foil, and remove it 8-10 minutes before the end of the cooking time.
