Today I offer you a simple recipe for baking tea - rice muffins or muffins. Interestingly, rare types of flour (in this case, I mean rice flour) can be found more and more often in recipes for delicious homemade pastries, although getting them is sometimes very difficult. But if you really want to, you can buy these types of flour in specialized stores.

By the way, rice flour can be made even at home - just grind the cereals in a coffee grinder, and then sift the resulting flour. But all the same, it is hardly possible to achieve a very fine grinding.

  1. We will cook muffins from rice and wheat flour, chicken eggs, milk, sugar, butter, lemon zest and juice, as well as baking powder for dough.
  2. First, we immediately turn on the oven to warm up (180 degrees), since the dough is made very quickly - literally 15 minutes. In a bowl, beat soft butter with sugar - you can use a mixer or a whisk.
  3. Then add 2 whole eggs and one egg yolk. Beat again.
  4. Then pour in the milk. We rub the lemon zest and squeeze the juice from half of the fruit - we also add all this to the dough.
  5. Then we sift two types of flour into a bowl to the rest of the products, which we pre-mix with baking powder.
  6. Stir the dough with a spoon or spatula - the main thing is to do this for a short time.
  7. Mixed dry ingredients with liquid - the dough is ready. It should be lumpy, not smooth, as this is what makes fluffy muffins and muffins.
  8. Now let's decide on the molds - I use silicone ones, they do not need to be oiled. In addition, I insert paper capsules (cuffs) into the forms - this is not only beautiful, but also practical. We spread the dough into about 2/3 of the molds. I have 6 cupcakes here.
  9. We make muffins in the same way - only 10 pieces came out (they are one and a half times less).
  10. You need to bake rice muffins at a temperature of 180 degrees for about 30-35 minutes. The cupcakes are not very reddish, but look how delicious they are!
  11. But the muffins turned brown and remained flat. That is, choose for yourself which form you like best - and bake in that one.
  12. Cool ready-made sweet pastries with rice flour on the wire rack.
  13. Light, fluffy and scented rice muffins are ready. We serve them with milk or tea.
