Light and tasty breakfast or snack - salad with poached eggs, mushrooms, bell peppers and feta. Raw mushrooms give the salad an interesting taste, and an unusual dressing with walnut oil, mustard and tarragon - spicy notes and a pleasant aroma.

  1. Pour water into a deep frying pan (2 cm high). Pour in apple cider vinegar, bring to a boil. Break the eggs one at a time into a bowl and gently pour into slightly boiling water. Boil poached eggs until the egg white is completely white for 3-5 minutes. Carefully remove the eggs with a slotted spoon and place them on a napkin to absorb the water.
  2. Combine and mix all the ingredients of the dressing until smooth.
  3. Peel the onion, cut into thin half rings. Cut the pepper into strips. Cut the champignons into slices.
  4. Combine onions, bell peppers, mushrooms, lettuce mixture and dressing. Mix.
  5. When serving on a salad, put poached eggs, sprinkle with crumbled feta and black pepper to taste.
