Salad with smoked chicken, pear and cheese balls is a very tender and light salad with a mild but interesting taste.   1. Let's prepare all the ingredients. We remove the skin from the smoked chicken breast and separate the meat from the skeleton. Wash and dry the pears and parsley.
  2. Curd cheese is better to choose with a thick, dense texture, so that it is easier to form balls from it in the future. Pears are better to choose sweetish varieties, not overripe, but soft, but dense.
  3. Remove the required number of leaves from Beijing cabbage and cut them, smoked chicken fillet and pears into approximately the same small cubes. Finely chop parsley and almonds.
  4. If desired, almonds can be peeled, roasted, or both. I used regular unroasted almonds and did not remove the skin from it, since for me this moment is not fundamental in this recipe.
  5. Mix Chinese cabbage, chicken and pear in one bowl, add olive oil, salt and black pepper to taste. Stir gently until all ingredients are evenly distributed.
  6. Combine chopped almonds and parsley with curd cheese and mix thoroughly until smooth.
  7. Put the chopped and seasoned ingredients on portioned plates. With the help of two teaspoons (or hands), we form small balls from the cheese-nut mass and place them on top of the rest of the ingredients on the dish. If desired, lightly sprinkle the salad with freshly ground pink pepper. Done, you can serve.
